The SoilMates™ Dried Chile Seasonings, Powders & Pods

Dried Whole ChilesIt’s sometimes quite hard to imagine that the Chilli and Cayenne ground seasonings commonly on sale are even related to the vibrantly coloured, feisty fruit of the extended Capsicum family.

Often garishly coloured an unlikely rusty red or eye-piercing orange, the powder seems to delivery little more than strident heat and no flavour worth mentioning. And “raising the dose” of many of these mass produced powders merely produces a nondescript, cauterising heat that will obliterate any last vestiges of flavour to the entire dish, as well as annihilate one’s taste buds in the process too!

The SoilMates™ range of ground and powdered chiles are made on the premises from more than 100 of the finest named varieties in our collection that lend themselves particularly well to drying (sometimes smoking, too), grinding and milling.

Romantics among you would likely prefer that process to take place out in the roistering heat of the summer sun but, hey, this is Britain! We rely instead on quality drying equipment, ensuring that the finest named variety chile seasoning reaches you at the peak of its aroma and flavour, as well as pungence.

Some dishes are better served by flaked, coarse ground or pestle & mortar hand milled seasonings. We will happily undertake any bespoke milling to your specifications upon request at only modest additional cost. Please let us know of your requirements prior to placing your order to allow us to schedule the processing accordingly.

The greater demands, and greater expense, of specific named varities are not always necessary to obtain the desired culinary result, of course. In such cases, why not leave the selection to be our choice from those varieties that are particularly plentiful on the day? You are still able to choose between the major species C. annuum, C. baccatum, C. chinense, C. frutescens and C. pubescens — to prevent our selection inadvertently being quite incompatible with the culinary style of your dish — while still enjoying top quality seasonings at less cost.

For certain dishes, only whole dried pods will do, best of all the SoilMates™ named variety whole dried pods, of course. Perhaps you would like to make your own ristas, either purely for decoration or a convenient, time honoured method of dried chile pod storage?
